As you can see, I'm on a pumpkin kick with all these delish choco-pumpkin concoctions.
It is almost Halloween, people!
The air is a little cooler, so it sort of feels like the beginning of Fall--we must make pumpkin-y stuff now!
And for some reason I think that anything with pumpkin in it is perfect for breakfast--it's a fruit, is it not?

So, guess what? These are Vegan!
But why am I not surprised--whenever I see an especially delectable chocolate dessert (especially if it's a cupcake) I just assume it's Vegan.
This recipe originated from the book Vegan Cupcakes Take Over The World, which I am totally putting on my birthday list!
I hope I can wait that long--I might have to buy it before then, because I'm considering just doing a sampling of cupcakes from VCTOTW to serve as my official "birthday cake"-- wouldn't that be fun?
These cupcakes would do any birthday girl proud!

There are some cupcakes that just take things up a couple hundred notches, and this is one of them!
Forget your classic yellow batter with chocolate buttercream, move aside devil's food with fudge frosting--make way for the Chocolate Chipotle Cupcake with Lime Filling and Lime Frosting (and it's vegan--why does this not surprise me?!)!
This is the culinary masterpiece of Nicole, from Cupquake, and this is her entry in the Iron Cupcake Challenge. I never knew that there was such a competition, but I'm all for it!

We saw another peanut butter cupcake recipe the other day, but this one looks very different, and definitely the presentation is more "gooey" ;-) than the other more "polished" cupcakes from the other day.
In this photo, it is the frosting that is getting me--I LOVE that it's pilled up on top in a heap cuz you know that if the cupcake part is very peanut buttery, you will need a whole bunch of frosting to balance it out.
That is just a hard cold fact--more frosting = more yumminess!

For all the scrumptious looking Vegan desert dishes I find, you think I must be searching for them, but I'm not.
They are just everywhere-- and I am convinced that the sheer number of vegan chocolate dishes must mean that they taste good, right?

I know, I know--I couldn't believe it when I first saw the recipe either.
You know how ingenious the Vegans are--they will find any way to make chocolate desserts that are uber rich and decadent.
Exhibit A--please regard this innocent looking brownie. Who would have guessed that it had black beans inside taking the place of flour?
I first saw this over at 101 Cookbooks and the photos of this dessert are amazing over there! (See the link for "Amazing Black Bean Brownies" below).
Apparently black bean brownies are now being sold in at least one restaurant, and folks are going ga-ga over them!!!
I am so tempted to make these just so I can give them to unsuspecting people and then let them know they've been eating black bean brownies :-) .
Plus, they're healthier for you!

I am not a drinker at all, but this cake is calling my name!
I would probably be drunk off of one piece. I am soooo sensitive to any amount of alcohol--one time I couldn't drive back home after having Tiramisu in a restaurant. (I know, that's sad! :-) )
But I'd be willing to risk it all to taste this--maybe this is one I should make at home and it won't matter if I get tipsy.
And this is Vegan, too! [jumping up and down for joy]
I don't know why that thrills me--I just love the way Vegans do chocolate. :-)

Oh, you cannot go wrong with a banana chocolate chip muffin, can you?
And to top it off--these are Vegan!
It astounds me that such a glorious muffin can be made without any eggs (and no dairy either) in there, but behold--these are nice and puffy, just like a muffin should be!
