Summertime Pick-Me-Up: The Eggless Chocolate Cake with Coconut Buttercream

The title of this photo was "Wintertime Pick-Me-Up", but I think this cake can pick me up any time of the year!

The chocolate cake part is actually eggless, and it still looks great!

Then we're hit with a double punch of frosting--first a thin layer of chocolate frosting, and then a thick dollop of coconut buttercream!!!!

I've never had coconut buttercream, but all of the sudden I'm craving it :-)

Yeah, I'm just amazed that a cake without eggs can look so moist and yummy, but voila--this one does!
