These would be great for Sunday brunch or Saturday morning, or any other day of the week that you happen to have time to make pancakes.
Or dinner. (Why not?)
You can't really see the Raspberries in the photo above, but take a gander at this:
To be honest, whenever I make pancakes I just use a Bisquick mix (it's a ready-made pancake and baking mix that you just add eggs and water and oil to).
I have noticed that the trick to adding in "extras" like chocolate chips and such is NOT to stir them into the batter. Been there, done that and it doesn't turn out as well as pouring the pancakes on to the griddle or pan, then immediately placing the chocolate chips or whatever you want to add on to the pancake that has not set up yet.
Yes, this means that one side will look all pretty like those from the masterful cook/photographer who shot these, and that the other side will look like a normal pancake.
However, it also means that the chips are evenly distributed, and one pancake doesn't have a ton of chips while the last pancake gets like only 2 chips in it.
If you wanna make the pancakes from scratch, here's a great video. This is for chocolate chip pancakes, but of course feel free to add the delectable raspberries too!
